Carrot Cake Cupcakes

Took a chance with these but they were surprisingly good abd close to the real thing.
Hubby says they are too moist but I don't see a problem with that ;-)
Sorry I dont have a pic they dissapeared too quick.

2 cups almond flour
2 tsp baking soda
1 tsp salt
1 tBsp cinnamon
1 tsp nutmeg
1 cup dates
3 bananas
3 eggs
1 tsp apple cider vinegar
1/4 cup coconut oil melted
1 1/2 cups carrots grated
3/4 cup walnuts chopped

Preheat oven 180 degrees
Combine almond flour baking soda salt cinnamon nutmeg in a bowl
Blender blitz dates bananas eggs vinegar oil
Pour wet ingredients in with dry and stir well
Fold in carrots and walnuts
Pour mix into muffin tin with or without paper cups
Bake 30 mins

Frosting:
1 cup coconut oil
1/2 cup honey
1/4 cup cashew butter
2 tsp vanilla
